Answer
When working in cislunar space or interplanetary space, planetary bodies other than Earth can interfere with line-of-sight access between Earth and your satellite. At times you may even notice access lines and computations in STK that appear to pass "through" the surface of a planetary body, even if you enabled the Line of Sight constraint.

This occurs because, by default, STK only considers the satellite's central body as an obstructing body. You must specifically call out other central bodies as access constraints. To do this, open your satellite properties, go to the Constraints -> Sun page, and find the Additional Central Body Obstruction section. Select the "Use" check box and assign the relevant central bodies. When you apply your changes and recompute your accesses, you will see that STK now properly accounts for eclipses of the selected central bodies.
